Chandon Late Disgorged Blanc de Blancs is made with Chardonnay from a range of cool climate vineyards in the Yarra Valley, Strathbogie Ranges and Whitlands Plateau.

Between 250 and 820 metres in elevation, the vineyards experience cool night time temperatures, allowing the slow development of Chardonnay flavours while retaining its high natural acidity.

The fruit is harvested over several weeks, typically in the cooler parts of the day to preserve quality and minimize colour extraction during pressing. Parcels from each vineyard are pressed and fermented separately.

The wine is made using the time honoured méthode traditionnelle – the traditional French method of making sparkling wine. There are two fermentations. The first occurs in barrel, with select parcels chosen for blending and bottling.

The second occurs in bottle, creating tiny bubbles. The wine is then aged for 10 years on lees. Once the lees are removed, the wine matures for six months further.

Pale straw, Chandon Late Disgorged Blanc de Blancs is soft and plush with lingering nutty, toasty flavours and a long, fine acidity. Drink within five years of release.
